Crispy Baked Red Potatoes

When you do a makeshift lobster "boil" dinner and need a delicious side dish - stat - make these crispy baked red potatoes from scratch in just 25 minutes. They taste like they're fried, but they're actually baked in olive oil! Make this your next side dish and see how everyone raves about your cooking.

Scale this recipe by estimating 3-4 potatoes per person. 

 

Crispy Baked Red Potatoes

 

Serves 2

 

7-8 Small red potatoes, sliced in wedges 

Dried basil

Sea Salt

Fresh ground black pepper

Olive oil

2 Garlic cloves, minced

 

Wash and dry the potatoes well, carving off any bad spots. Even if they’re a bit soft, they’ll cook just fine in the oven. 

 

Set oven to 400 degrees. Cover a rimmed baking sheet with foil. Slice potatoes in small wedges and add to a large ziplock bag. 

 

Add 2-3 tablespoons of olive oil, minced garlic and all the spices, seal it and give it a few good shakes to coat everything well. Measure with your eye, it will make you a better cook!

 

Place on baking sheet and bake for 25 minutes, flipping wedges once during baking.

 

Serve immediately and enjoy!
